The evenings arrive a little earlier, the air starts to cool, and suddenly the idea of a warm meal bubbling away in the oven sounds good again. That’s when this simple chicken pot pie belongs to the table.

Ingredients
1 Tbsp olive oil
- 1 lb chicken breast
- 3 Tbsp butter
- 1 medium onion, diced
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 scoops Vitauthority’s Bone Broth Collagen Powder – Chicken & Herb flavor
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1/2 tsp dried rosemary
- 1/2 tsp onion powder
- Salt & pepper, to taste
- 2 celery stalks, diced
- 1 (12 oz) bag frozen peas and carrots
- 2 refrigerated pie crusts
Directions
Step 1
Preheat oven to 400°F.
Step 2
Heat olive oil in a Dutch oven and cook the chicken until cooked through. Remove and dice.
Step 3
Melt the butter in the same pot. Add the onion and cook until softened. Stir in the flour and cook for 1 minute.
Step 4
Whisk in the chicken broth and heavy cream until smooth and thickened. Stir in the Bone Broth Collagen – Chicken & Herb, thyme, rosemary, onion powder, salt, and pepper.
Step 5
Add the diced chicken, celery, and frozen peas & carrots. Stir until heated through.
Step 6
Pour into a pie crust, top with the second crust, crimp the edges, and cut a few slits in the top.
Step 7
Bake for 35-45 minutes, until golden brown and bubbling. Let rest for 10-15 minutes before serving.
