Crêpes have been part of French culture for centuries, loved for their paper-thin texture and endless possibilities, from a simple squeeze of lemon to elaborate sweet fillings. For fall, we’re filling ours with pumpkin cream and adding Vitauthority’s Multi Collagen Protein in Pumpkin Spice right into the batter. The pumpkin spice brings the seasonal flavor of fall, while protein makes these delicate little crêpes an nutritional addition to your wellness routine. Finish with a generous dollop of whipped cream, and you’ve got a French classic with a very autumnal personality.
Ingredients
Crepes
- 1 cup 2% milk
- 2 large eggs
- 1 cup all-purpose flour
- 1 tbsp melted butter
- 1 tbsp sugar
- 1 tsp vanilla
- Pinch of salt
Pumpkin Cream Filling
- 4 oz cream cheese, softened
- 1/2 cup pumpkin puree
- 1 scoop Vitauthority Multi Collagen Protein - Pumpkin Spice
- 1/4 cup powdered sugar
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- 1 cup heavy whipping cream
Directions
Step 1
Blend all crepe ingredients until completely smooth.
Step 2
Pour about 1/4 cup batter into a lightly greased skillet and swirl into a thin layer. Cook about 1 minute per side. Set aside to cool.
Step 3
Beat cream cheese, pumpkin. Multi Collagen Burn, pumpkin pie spice, and vanilla until smooth.
Step 4
In a separate bowl, whip heavy cream until stiff peaks form.
Step 5
Gently fold whipped cream into the pumpkin mixture until light and fluffy.
Step 6
Spoon pumpkin cream into cooled crepes, then fold and roll. Finish with a dusting of powdered sugar and pumpkin pie spice.
Step 7
