Ingredients
Peach Filling
- 5 cups peaches, peeled and sliced
- 2 tbsp granulated sugar
- 2 tbsp brown sugar
- ¼ tsp cinnamon
- 1 tbsp lemon juice
Batter
- 6 tbsp butter, melted
- ⅔ cup all-purpose flour
- 1 scoop Vitauthority Vanilla Plant Protein
- ¾ cup granulated sugar
- 1½ tsp baking powder
- Pinch of salt
- 1 cup milk
- 1 tsp vanilla extract
Directions
Step 1
Preheat oven to 350°F.
Step 2
Combine peaches, sugars, cinnamon, and lemon juice in a saucepan and cook for 3–5 minutes until slightly softened.
Step 3
In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
Step 4
Pour melted butter into an 8x8 baking dish.
Step 5
In a bowl, whisk together flour, protein powder, sugar, baking powder, and salt.
Step 6
Add milk and vanilla and whisk until smooth.
Step 7
Pour batter over the melted butter. Do not stir.
Step 8
Spoon peaches and juices evenly over the batter. Do not stir.
Step 9
Bake for 40–45 minutes, or until golden brown and bubbly.
