This delicious Elote Street Corn Protein Skillet Dip Recipe will be the star of the show at all of your summer cookouts! Featuring our Bone Broth Collagen, this zesty snack is packed with 16gs of protein and 13gs of collagen, making it the perfect party dish!
Recipe Ingredients
- 4 cups corn kernels (fresh, frozen, or grilled)
- 8 oz cream cheese, softened
- ½ cup Greek yogurt
- 1 scoop Vitauthority Beef Collagen
- ½ cup queso fresco cheese, plus more for garnish
- ¼ cup finely diced purple onion
- 1 garlic clove, minced
- Juice of 1 lime
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp cumin
- 2 tbsp chopped cilantro
- Salt and pepper, to taste
Directions
Step 1
Char the corn in a large skillet over medium-high heat until lightly browned and blistered.
Step 2
In a mixing bowl, combine cream cheese, Greek yogurt, Beef Collagen, garlic, lime juice, chili powder, smoked paprika, cumin, salt, and pepper.
Step 3
Fold in the charred corn, questo fresco cheese, purple onion, and cilantro.
Step 4
Transfer to a serving dish.
Step 5
Top with additional cotija, Tajín, cilantro, purple onion, and a squeeze of fresh lime.
Step 6
Serve warm or chilled with tortilla chips, crackers, or fresh vegetables.
