Recipe Ingredients

  • 4 cups corn kernels (fresh, frozen, or grilled)
  • 8 oz cream cheese, softened
  • ½ cup Greek yogurt
  • 1 scoop Vitauthority Beef Collagen
  • ½ cup queso fresco cheese, plus more for garnish
  • ¼ cup finely diced purple onion
  • 1 garlic clove, minced
  • Juice of 1 lime
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • 2 tbsp chopped cilantro
  • Salt and pepper, to taste

Directions

Step 1

Char the corn in a large skillet over medium-high heat until lightly browned and blistered.

Step 2

In a mixing bowl, combine cream cheese, Greek yogurt, Beef Collagen, garlic, lime juice, chili powder, smoked paprika, cumin, salt, and pepper.

Step 3

Fold in the charred corn, questo fresco cheese, purple onion, and cilantro.

Step 4

Transfer to a serving dish.

Step 5

Top with additional cotija, Tajín, cilantro, purple onion, and a squeeze of fresh lime.

Step 6

Serve warm or chilled with tortilla chips, crackers, or fresh vegetables.
