Ingredients: Blueberry Baked Oatmeal with Vita Plant Protein

1 cup old-fashioned rolled oats

1 scoop vanilla flavored Vitauthority Plant Protein Powder

1 scoop Vitauthority Fiber Fix

3/4 tsp baking powder

1/4 tsp cinnamon

1/4 cup maple syrup

1 egg

1 cup milk

1/4 cup unsweetened applesauce

1 tsp vanilla extract

2 tbsp fresh lemon juice

3/4 cup blueberries

Directions

Step 1

Preheat oven to 350°F and grease a small baking dish or loaf pan.

Step 2

In a large bowl, whisk together the oats, protein powder, Fiber Fix, baking powder, and cinnamon.

Step 3

In another bowl, whisk together the maple syrup, egg, milk, applesauce, vanilla, and lemon juice.

Step 4

Pour the wet ingredients into the dry ingredients and stir until combined. Fold in the blueberries.

Step 5

Transfer to the prepared baking dish and top with a few extra blueberries if desired. Bake for 30–35 minutes, until lightly golden and set in the center.

Step 6

Let cool slightly before serving.
